First off let me apologize for the terrible picture! It’s so messy but I promise it was o’ so tasty!


1/2 cup oats, cooked with water, with half a banana, some cinnamon, and a tablespoon of peanut butter. The classic pb&b brekkie.


Who has tried Campbell’s V8 soups? If you haven’t, you must! They’re splendid! For lunch today I had the Butternut Squash flavor, which was superb, perfectly spiced, better than any b-nut soup I’ve ever tasted! And to top it off, only 300 calories in the entire carton! Yes, I did in fact consume the entire carton, hence the title of this post. 🙂

On the side, a toasted whole wheat, double fiber English muffin with one Laughing Cow light garlic & herb cheese wedge, and also some steamed swiss chard! Yumm.. I ❤ green food!




Was very colorful! A Boca patty with ketchup, and on the side, sweet potato fries, with their own puddle of ketchup!


The fries were seasoned different than they normally are. Since I couldn’t find the regular salt, I used garlic salt. And to intensify the flavor, some cumin and curry powder. These spices could just faintly be tasted, and didn’t overpower the flavor of the potato or the sweetness of the ketchup!

Oats again! The mix included: 1/3 cup oats, half of a pear, a scoop of pumpkin, cinnamon and cloves, and sprinkled on top: dried cranberries and almonds! This was superb! The pear added natural sweetness, and the spices jazzed up the pumpkin to taste like pie filling! The portion was too small, so I’ll use 1/2 cup oats in the future, when there’s no banana added.



A couple of hours after breakfast, I was very hungry again. I blame the small portion size of breakfast. So to take care of that hunger, I had Wasa crackers with peanut butter! Along with a large mug of coffee with soymilk. Super yummy! And all for under 200 calories, can you believe it?


After my snack I went for a refreshing run. Only about 20 minutes but it was cold outside so it felt like I’d been out for hours. You can bet I was famished for lunch!


This may seem just a little strange, but I made a wafflewich with a Boca patty in the middle! With spinach and ketchup! Waffles are like bread times a million, because they’re sweet! And just like the ketchup, they balance out the meaty flavor of the Boca burger. On the side, a tart, bright green apple, and a large pile of baby carrots. This lunch tasted like health!


Unpictured, I had two more Wasa crackers with peanut butter for “dessert.”

At work I munched on two small bananas, which was not a good idea. The bananas weren’t ripe at all, consequently gave me a terrible stomach ache. I had planned to eat leftover peanut chickpea stew for dinner, but instead, I ate a couple containers of strawberry yogurt and some Ritz crackers. Somehow yogurt helps stomache aches, I don’t know why.

I’m at my grandparents’ house so there’s no Bible nearby, but I’ll try to come up with something by memory…

Oats with dried cranberries, candied almonds, fresh blueberries, and a splash of soy milk. So good! I did not want this bowl of oats to end!


Yesterday I made the Mini Crustless Tofu Quiches from Fat-Free Vegan. They didn’t turn out quite right because I forgot to drain the tofu first. So today I turned the whole mess into one giant tofu scramble! Well… since it was silken tofu.. it was more like tofu mush..le! Haha! It was still AMAZING.



So, excluding the two mini-quiches I ate last night, I ate almost an entire package of tofu on my sandwich today ;P


After seeing a peanut-chickpea stew featured on Fay’s blog a few days ago, I knew I had to try it! It turned out so much better than expected, really! You must try this recipe! Whoever thought of it is genious!



Ahh, blessed dessert. Tonight I had simply a serving of Kashi GoLean, with 8th continent soy milk.

Pumpkin oatmeal! I used 1/3 cup oats, 1/3 cup pumpkin, 1/2 a banana, some cinnamon, cloves, and a splash of vanilla rice milk for sweetness. It didn’t need the rice milk after all; the banana lent enough sweetness to the oats!



Lunch was super yummy of course, because it was PEANUT BUTTER! And banana! THE best food ever, right?


I saved the apple for a snack between lunch and dinner.


I had hardly any time to prepare dinner so I went with the simplest, yet healthy and vegan thing I could come up with: a hummus sandwich. I ended up putting a couple Morningstar Farms veggie breakfast patties on that sandwich, too.


All in all, it wasn’t the most exciting day food-wise. But that’s ok because I’ve got something really yummy planned for tomorrow! …

I house-sat for my aunt and uncle this weekend, so I got to eat their scrumptious food! Seriously, they’re the epitome of “instant” foodies! Snack bars, instant oatmeal, toaster scrambles, Lean Cuisines, they’ve got it all! ‘Twas yummy! And I managed to stay vegetarian all weekend (except for today, but we’ll get to that..)

As a snack, I scarfed down a pina colada-flavored yoplait yogurt. Unfortunately I did so before reading the label. Twenty-eight grams of sugar, can you believe it?!? Never again. And I also had a small Gala apple and a chunky of homemade whole wheat bread 😀

It was a large snack but I needed the fuel since it would be still a few hours until lunch. My mom, sister, and I picked up our great aunt and then headed to Romano’s Macaroni Grill near the Clackamas Town Center in the best city in the world.


Wow.. that picture’s very pretty. Tehe, it’s not the one I visited today.. I found this picture on Google actually. In fact I left my camera in the car while we ate.. doh!

Before we ordered our meals we were served a big hunk of bread to split. I didn’t eat any because I knew if I did I wouldn’t be able to finish my lunch. For our main entree my sister and I split the Vodka Rustica- which was wow. amazing. Too bad I can’t find a picture that will fit on my blog because.. wow. It’s not very often I get to eat Penne pasta with grilled chicken and smoked prosciutto in a zesty tomato-cream sauce made with SKYY Vodka®. Topped with Parmesan cheese and baked until golden. Haha yeah you can bet I totally copied that from the website 😀

When we got home I went for a nice run and then crashed in my bed for a couple hours. Then I munched on another Gala apple whilst listening to some tunes in my sister’s bedroom.

I did NOT feel like dinner tonight. See I’m just not a dinner person. Maybe that’s because for so long I skipped out on it in order to “lose weight.” But for some reason it’s hard to stomache food in the evening, so I only end up eating dinner 3-4 times a week.

But I did anyway 😀

I made a nifty little Boca-burger salad, with spinach, a Boca burger, garlic hummus, ketchup, and a hard-boiled egg. Too bad the picture isn’t loading, I’ll see if I can get it to work later. After dinner I was immediately craving sweets but unfortunately we don’t have any in the house, so I settled for a couple Lifesaver’s Breath Mints. 🙂 After that hummus I probably needed it 😛

Oats with half a banana and flax. Slice of light wheat toast with peanut butter and the other half of my banana!



Peanut butter (can you believe it? :P) on light wheat bread, an apple, and the last baby carrots.



A quarter cup of the best hummus in the world! On a slice of whole grain bread, and a mozzarella cheese stick on the side. This was part 1 of my dinner; I also ate when I got back home from youth group: 2 apples and also some more string cheese.




Two slices of light bread with Smart Balance and cinnamon.


Also a tall glass of skim milk for dipping! This was a huge glass of milk; it took me all morning to drink!
