Saving the Environment

Have you ever noticed that refrigerators have a habit of becoming landfills? I’m going to be eating so much tofu today and tomorrow, because I refuse to let it go to waste in my refrigerator! Usually, I end up throwing over half the block away because it goes bad, but not this time! So this morning, I decided on a savory breakfast: “scrambled eggs and toast.”

Of course, the “eggs” were tofu bits, seasoned with curry powder, salt, black pepper, and cayenne pepper. The toast was truly toast, but spread with hummus, instead of butter.

De-licious! I also ate a juicy pink nectarine.

I’m off to work and won’t be back until lunch. Have a great day everybody!
