Vegan Apple Crisp

  • 4 cups apples, peeled, cored, and thinly sliced
  • 1 cup whole wheat flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tbsp flax + 3 tbsp water
  • 1/2 cup plain or vanilla soymilk (or any non-dairy milk)
  • 1/3 cup applesauce

Topping:

  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
  • 3/4 cup crushed walnuts (optional)

Place apples in greased baking dish. Combine wet and dry ingredients separately, then mix together. Pour over apples. Sprinkle cinnamon-sugar mixture evenly over everything. Let set for a couple minutes, then bake at 325 degrees for 50 minutes. Serve warm or cold.
