Honey Nut Pancakes

Serves 1 person.

  • 1/4 cup whole wheat pastry flour
  • 1/2 tsp baking powder
  • pinch salt
  • cinnamon to taste (I used about 1/2 tsp)
  • 1/4 cup non-dairy milk (my pancakes were made with unsweetened plain soymilk)
  • 1 heaping tbsp applesauce
  • 1 tbsp honey or agave nectar
  • 1 tbsp peanut butter

Combine first 4 ingredients. Then mix wet ingredients, and add to dry. Let set for a couple of minutes. Pour 1/4 cup of batter on to a greased griddle at medium heat, and cook until bubbles start to form on top. Flip and brown. These burn quickly, so keep an eye on them. Serve with banana (a must!) and a sweet drizzle of honey or agave nectar.

Makes 2 pancakes.
