Hello! Would you like to see what I ate today? :P

I had a very random breakfast today. Our house is seriously running low on food so I just threw a few things together. Two Morningstar Farms breakkie sausages, an apple, a slice of cheese, and a tiny lil glass of oj. Does anybody else call it this? “OJ..”

I had a couple of morning snacks today while studying. First, a plum (then another plum.. I just can’t stay away from these things!).

Now this is an impressive lunch! If I may humbly say so. It took some extra time to prepare but it was so worth it! It had a base of mixed lettuce, then piled on top of that was.. get ready for this.. some roasted sweet potato, roasted carrots, Wheat Thins fiber select crackers, black beans, snap peas, garlic hummus, mashed potato, hazelnuts, cashews, raisins, and lastly some salsa sprinkled lightly over the whole thing. I think my favorite flavor combo in this salad was the garlic hummus + mashed potatoes. Can you say creamy? The amazing part was that this whole salad was made of random leftovers! Doesn’t the picture look more like pig slop to you now?

Hehe, what a cute little dinner! When dinner time rolled around, I was at a friend’s house. We decided to be lazy teenagers and just make some pb & j’s. Luckily her house has quite the assortment of jellies and breads! Mine was made on dark wheat bread (whatever that means, I don’t see how wheat can be anything but wheat colored), with homemade marionberry preserves and Jif peanut butter. Presented on an inviting paper plate.

What? Today’s Pancake Day?

I just learned that after I ate dinner. Sad. Oh well.. maybe tomorrow will have to be pancake day instead… ;)

This morning I woke up hungry but in the hustle and bustle of getting ready for school I forgot breakfast! I ate a “lame” breakfast of a deviled egg, some raw hazelnuts, and a slice of cheese, all eaten while running around the kitchen preparing lunch. Not very voluminous, but the fats kept me very full for hours!

Here’s my lunch:

Classic peanut butter sandwich on whole wheat, a “thick & creamy” yogurt, and an apple. I’m starting to eat bigger lunches so I don’t eat so much in the afternoon.

I actually didn’t eat anything else until dinner. I guess the protein from the yogurt was enough to hold me over.

First, a plum and a slice of cheese, the same kind I had this morning.

Then a huge, thick slice of homemade honey oat bread slathered with a heaping helping (oh yes, there was more added after the pic) of garlic hummus. Mmmmm. I noticed I eat a lot of bread… but I don’t care! Bread is the staff o’ life, and I’m not cutting back! :P

After youth group this evening I came back starving! It had been almost six hours since I’d eaten. So.. I had some unpictured strawberry yogurt, and some crackers crushed into a small bowl of applesauce. A perfect little snack. The only thing that could have made it more perfect was if I’d photographed it.

Tonight at youth group the pastor preached about being willing to give up your whole life and everything you have for Jesus. He read from a book called “Extreme Devotion” which tells stories of martyrs and Christians who literally have risked death or imprisonment or both, just to preach the Word of God. It’s amazing what those people have done, really.

It’s Raining, It’s Storming

A Kashi strawberry flax waffle (I don’t know if I’ve mentioned this- but we buy 40-packs of Kashi strawberry waffles at Costco. That’s why I only eat the strawberry flavor), 2 tbsp peanut butter, a drizzle of honey, an entire apple, sliced (when you slice it it looks like much more food!), and coffee with Silk creamer.

Sorry, no picture of my lunch! It was a hummus and spinach sandwich on whole wheat, an apple, and a granola bar. Pretty typical lunch.

This afternoon, I’m ashamed to say, I overate. There’s no pictures of the food. A while after my rather large snack, I made some tea and worked on computer stuff:

After a run I made a smoothie that ended up being my dinner. It contained 3 tbsp of peanut butter, 1 scoop chocolate protein powder, and rice milk. Alongside, an apple. I used to have pb/chocolate smoothies all the time.. where did they go?

Oops! I’m gonna make the rest of this post quick because the lights just flashed! It’s storming like mad outside and I’m suspecting we’ll lose power.

Microwave to the Rescue

Breakfast

For breakfast this morning I made some yummy uncooked oatmeal! I think I like uncooked oatmeal better because it’s not so slimy. It was a mix of 1/2 cup oats, 3/4 cup soymilk, 1/4 cup raisins, and a little bit of vanilla extract. There’s no picture, it just wasn’t pretty. Next time I’ll make it look much more appetizing!

As a mid-morning snack I had a Nature Valley Oat’s n’ Honey granola bar. My family’s been munching on these snacks for as long as I can remember. We buy the 40-pack at Costco. That’s some hard-core granola munching.

Lunch

This meal is photographed for you! First, I started off with an apple:

I’d planned on making some scrambled eggs with veggie sausage, and maybe some toast, basically breakfast for lunch. But at the last minute I decided to accompany my mom and sister to the Clackamas mall for some clothes shopping. I didn’t have much time to make lunch, so for the first time ever I used the microwave to quickly cook up eggs:

They turned out PERFECT! I’ve never liked how a pan turns the eggs a brown color and makes them crispy, so this method is perfect! I threw in two eggs and a couple veggie breakfast sausages with the eggs for flavor, and black pepper on top for MORE flavor!

In the car I ate an apple pie Larabar. Again, no picture. I was very lazy with pictures today.

At the mall I had a few sips of my sister’s Jamba Juice- “Razzamatazz” flavored. I’m guessing it was mostly raspberries, milk, and orange juice, at least that’s all I could taste in it. For myself I got a soy capuccino from Seattle’s Best Coffee.

Dinner

This is not all I had for dinner! Sure looks like it though. But the fact is I also ate an apple and a chocolate Larabar. I ate two Larabars today! This is a spinach/lettuce salad (including snap peas! nomnom!) with raspberry vinaigrette.

Overall my appetite has been light today but I suppose that happens sometimes.

Right now I’m listening to the Twilight soundtrack. Has anyone else heard that soundtrack? What’s your favorite song? I’m very torn for favorite between Rob Pattinson’s song (the name escapes me) and Flightless Bird by Iron & Wine.

Verse of the Day: Tonight I’m not going to post a verse of the day. Actually I found a small piece of paper in my Bible which looks like it has been used as a bookmark for a very long time. It belonged to my great-grandmother, in fact. I’ll post what it says. It really helps me when I’m having a hard time.

Breakfast

Waffles, waffles, nothin better than waffles! Except maybe oatmeal.

Lunch

You know what my friend told me today? “I’m surprised you’re alive, Josie, all you eat is salad.” Harumph! No, all I used to eat was salad. I eat healthy now! :)

This is a salad with spinach, mixed lettuce (including that weird kind that looks like mini trees), snap peas, and tofu! Thanks Bliss for the suggestion about freezing tofu. I hadn’t thought of that. But it turns out I’ll finish these packages before they go bad since I eat some every day.

In the tiny container is light raspberry vinaigrette, and with my salad: a cherry pie Larabar! Yummnomnomnom.

Dinner

Dinner tonight was Sweet Potato Quinoa Salad. Well the name pretty much describes it all. Oh except for the fact that I added black beans instead of bell pepper. Just a note: if you’re going to make this recipe, do NOT add salt if you’ve already used vegetable broth with salt in it! Yes, I am a genius in the kitchen, can you tell?

I just got back from youth group and had a snack of a slice of whole wheat bread with an unmeasured amount of peanut butter. I’m guessing it was a little less than a tablespoon. I also ate an apple. So it’s kind of like a late-night mini lunch, hehe.

This Is What I Ate Today

Wow. I could not for the life of me come up with a better title than that. Rofl.

Breakfast

The best meal of the day! No matter what, it’s always flawless! I woke up craving toast, so I stuck a couple pieces in the toaster, only to remember we have WAFFLES in the freezer! And waffles are so much better than toast, agree!?

Two Kashi strawberry flax waffles, one tablespoon of peanut butter, a drizzle of honey (didn’t measure), and one plum. Also a cup of instant coffee with soymilk.

I basically didn’t do much this morning. Did a bit of homework while waiting for my friend to call me. He said he wanted to go for a walk (he lives near me), but he never called. Sad. :( A few hours after breakfast I ate a cherry pie Larabar and two more plums. I’d planned on having the Larabar with breakfast but forgot.

Lunch

Last week I bought two packages of tofu. Was I crazy?! My goodness how can anyone eat two huge packages of tofu before they go bad?

This is a classic sauteed tofu sammy, but with the usual evoo drizzled on is some nooch, soy sauce, and black pepper. Made for an interesting flavor combination. I’d make it again.

Dinner

And last but not least, is the picture I deeply apologize for. Bleck. This does not look appetizing. The only thing that saves this dinner is the fact that I also ate half of a delish cinnamon raisin bagel with cream cheese, and an apple, at my friend’s house.

This is the bag I’ve been carrying around for the last couple months. I bought it for eight bucks at the Wonderful World of Aeropostale. Well actually I got it for free, since I used a gift card from my dad. It’s a bit plain but I like it that way, cuz I can wear any outfit with it. I carry my books in it for school, take it to work, to church, anywhere I go!

Since I tend to run away screaming from any shopping situation, I think I’ll have this bag for a long time. It’s perfect :)

We Eat Like Kings

Breakfast

I woke up so hungry this morning! Strange because that just doesn’t happen lately. Anyway, I’m getting over a cold, so I figured I should incorporate some orange juice into my breakfast, eh? So I made Vitamin C Oats. What a corny name, haha.

Into the microwave went 1/3 cup oats, 1/3 cup orange juice, 1/4 cup almond milk, cinnamon and vanilla extract. Once it had cooked, I proceeded to pour on 1/2 cup of raisins! That’s a lot of sugar, but boy was this bowl tasty! :D

To add protein to my meal, since there was sadly none in that humble bowl of deliciousness, I grilled up (sauteed, whatever you want to call it) some plain tofu which I covered in organic ketchup (the last of it! ahh!) with a cup of coffee.

Lunch

Whew! Breakfast finally eaten I went to school and had the pleasure of eating this little pile of goodness:

This is a whole wheat wrap spread with cream cheese and peanut butter, and half of an apple, sliced. Some people don’t like the pb + cheese combo but I do. On the side, another large apple (didn’t finish it) and two carrots, peeled.

When I got home from school today I did the “class two” podcast from yogatothepeople.com. I haven’t done yoga since last school year and I forgot how relaxing it can be! Relaxing and energizing at the same time. I felt tired after half of the class (I’m not in shape for this! lol.) so I’ll finish it later.

Dinner

I certainly worked up an appetite for dinner! Not only did I do some yoga but my dinner was later than usual so I was prty hungry! Here on the plate a slice of Papa Murphy’s pizza (I’m not sure what kind; my mom bought it earlier today) with veggies and cheese (I’m guessing mozzarella and parmesan?), some roasted butternut squash with cinnamon, and roasted carrots. Yum, if only every dinner could be this good!

I was tempted to go back for another piece of pizza but instead I ate an apple (yet another!). I didn’t take a picture of it cuz I figure by now you guys know what an apple looks like in my house, I eat enough of ‘em! :P

Hmm… I have a Question of the Day for y’all. What’s your favorite dinner? I’m just curious cuz I’ve never liked “dinner” foods, but I want to know if you guys like dinner, and why!! :)

I am a Garlic Lover

Breakfast

My new fave- Almond butter oats! Seriously, I think I’ve eaten half of the huuge jar already! Into this breakfast bowl of goodness went 1/2 cup oats, water, vanilla extract (the key ingredient, other than ab of course!), and 1/4 cup raisins. Holy Yum! So creamy and nutty and delicious.

Lunch

While I was preparing lunch: I snacked on a medium apple, and the last (tear!) bottle of POM.

Okay, I know this wrap looks good, but I tell you it tasted even better than it looks! Atop a whole wheat wrap is piled hummus (with additions, keep reading!), tomato, plain sauteed tofu strips, and spinach.

The hummus I buy comes with a little tray of mix-ins, including: roasted red pepper, roasted pine nuts, “garlic lover’s” (minced garlic), and a cilantro & herb blend.  So far I’ve tried all but the cilantro blend, which I will leave for my mom to consume, since I am not a cilantro fan. Today I mixed in some garlic lover’s and roasted pine nuts, and ohmygoodness the flavor was unbelieveable. Along with the distinct taste of garlic was this unidentifiable yummy flavor, probably from the pine nuts. Everything paired so well with the crispy tofu, I just can’t say enough about this lunch.

Have you all seen Fay’s artwork? I think it’s so cool she’s rediscovering old talents. Speaking of which… I’ve done a bit of the same lately. A couple weeks ago I saw a picture on my sister’s wall that I really wanted to draw for her.. too bad I couldn’t draw, aside from a few scribbles I’d done a couple years ago. But I wanted to recreate that picture for her so badly that I literally got down on my knees and prayed to God for the ability to draw. Ridiculous, right? Well, not really; here is my very first drawing ever:
